I admire your persistence and endurance on achieving these goals.
Funny, how things turn out. Here in Germany, when we talk about bread, we usually mean the "brown" or "black" one, not the white bread. We call that toast, it is not considered bread. In a conclusion: I usually don't eat much of eat (toast).
I enjoy a cold shower when it's warm outside. But for now, in the winter, I need the warm morning shower and I found it is what gets my motor going. On days I don't take that (very warm) morning shower I feel cold all day. The warmth gives me energy.
I very often do the intermittent fastening thing, having just a slice of bread (not toast) for breakfast, maybe a banana on a short break at work and then eat nothing until family dinner in the evening. Never had this as a goal but it developed by chance, not being very hungry (or realizing it) until dinner time. My wife is astonished lots of times, especially if we do some heavy work around the house/garden in the afternoon and she realizes I didn't have much to eat during the day. It's just how my body works, I guess.
You take some wonderful pictures. That is a good reason to get out into nature, capturing those moments. And with the modern technology everyone can do it, the cameras in cellphones got pretty good. Getting a beginners (bridge) camera isn't that expensive anymore, either.
As for positivity, I rely on a prayer by Franz of Assisi:
Lord, grant me the strength to change the things I can, the serenity to deal with the things I cannot change, and the wisdom to know the difference.
