Hands up who likes bananas? Well, I feckin love them, but they've got to be ripe and I mean yellow and even yellow/green. Once they start turning brown and going soft inside, I don't like them anymore, and once they go very brown, I used to just bin them, that is until I was introduced to banana bread, so if you've around three or four bananas that are brown and you are thinking of binning them, hold on a second and read through my recipe, it is so easy and I would say between prep, bake and clean up, you can get the lot done in around 1 hour 4o minutes and until you have tasted warm or slightly hot banana bread straight from the oven, you hav not lived!! So come on, start pulling these ingredients together, most kitchens will already have most of these, well at least in Ireland anyway.

Ingredients:
210g Flour
4 ripe bananas
A large handful of Walnuts.
150g caster sugar (I used Demura sugar)
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
2 medium eggs
120g butter
1 teaspoon vanilla essence

Ok, let's get to it, get all of your ingredients out beside you and grab a baking tray or tin, a weighing scale and a large bowl.

STEP 1: Preheat your oven to 160 degrees Celsius.

STEP 2: Mix the flour, baking soda, salt and ground cinnamon together in a bowl.

STEP 3: Take a separate bowl and mix together the eggs, butter, 3 mashed bananas, sugar, vanilla essence and walnuts. Break the walnuts into smaller pieces with your hands.

STEP 4: Now we need to add our flour mix, do this slowly while continually stirring. Its ready for the tin now.

STEP 5: Add your mix to a baking tray. Rub butter along the inside of the tin. This is to stop it sticking at the end when you want to pop the cake out of the tray

STEP 6: Grab another banana and slice it in two and place on top of the mix in the tin. I actually had two left over, so I used two and I also added some of my walnuts along the middle.

STEP 8: We are ready to go now, just grab your tray and lob it into the pre heated oven at 160 degrees Celsius for 80 minutes.

STEP 9: Remove from the oven. Allow to cool for around 5 mins. Tip the tin and remove the baking paper.

STEP 10: Allow to cool on a tray for another 5 minutes

Bon appetite!!

You're done! Time to tuck in and enjoy the fruit of your labours! To think that those bananas could have ended up in the bin!!

Looking at the ingredients, I must love this cake! Gotta try it :) Thanks for sharing the recipe man!

@tipu curate

Hey man, thanks a million, it is def worth trying, really tasty... My phone is broken so using a really old one with crappy camera so pics are a bit meh, but the end product is tasty, trust me!!

I love this! There is nothing quite like a good loaf of banana bread/cake. Freshly baked still warm is the best for me. But it is dangerous delight! As I will never have the self control to not eat the whole loaf/cake in one sitting. Enjoy!

Ha ha dangerous delight indeed!!!! Something about stuff like this straight out of the oven and still warm.

That is when they are most dangerous! I am craving this now really. I smelt some bananas in the kitchen and my stomach wanted that loaf/cake!

Give it a go one of the days and post how you got on, knowing you your photos will look like they came straight out of a cookery book!

Thanks buddy! I really appreciate the compliment. Yeah, I guess I need to do some experiments where I ferment some flour and use it in the banana loaf. Fermented sourdough banana loaf!

Oh my!!! This looks yummy, I love bananas and I also Like walnuts! This looks like a go for me, I wish I could have a bite, hehehe.

Thank you so much for sharing the recipe with us, I really do hope I get to make it someday.

Ya give it a try some day and let me know how you get on, I love bananas too! :)

I really hope I get to try out the recipe soon enough but I'm not really sure of that though.

Looks like bullfrog stew but tasty!! 😀

Ha ha, ya no prizes for presentation here, but twas mighty tasty!!!

I bet it was, I like anything banana cake'ish!

Love the final product, I think it is perfect for coffee and tea.

Absolutely right my friend, washed down with a cup of tea over a few evenings after dinner!

I love a banana cake, they are so yummy and a great way to use up old battered bananas. Plus if you don't have any at home, often they're dirt cheap in the shops.

Ya I love banana bread as well, putting the walnuts in was an experiment and they are actually a lovely addition.. I hate the idea of wasting food, so using up the old bananas and getting a tasty finished product is a serious win/win scenario

Banana and Walnut Cake looks beautiful and delicious, @ablaze. What does it smell like? :)
Is the secret in "1 teaspoon of vanilla essence"?

Oh, the smell is tremendous!! and it fills your kitchen and some of the rest of the house, give it a go!

I tried without the vanilla, but it wasn't great. My Banana bread
Maybe I'll try again... Thanks for sharing your experience, @ablaze.

Try to get all the ingredients and give it a go again, and hopefully it turns out better

This looks like it's even tastier than banana bread - and I didn't think that was possible! 😂

I'll definitely have to give this a go some time. Thanks for sharing the yumminess!

Thanks a million @traciyork, it turned out really tasty, the walnuts were an experiment and it worked well..

This is looks so delicious. I have never seen such kind of food. Nice to see your making process. Thanks
