In my place there many coconut trees. So so many man have activity producing Red Sugar. An organic sugar also called Javanese Sugar. I call this sugar as Gula Jawa.

I have several coconut trees, and for one tree can produces two kilogram in one month. But, I don't produces my self. I collaboration with neighbour who have skill to produce sugar. And for the owner of coconut tree will earning two kilograms as a part of sugar production after the worker take for himself. I think one tree can earning 4 until 5 kilogram. Maybe composition of sharing become 40:60. 40% for the owner of coconut trees.

Today, is difficult to find people who have skill in produce red sugar. Many people leave this profession and prefer work as employee in a company. I think in few year, we more difgicult to get local red sugar producer.

Now, I will share about how to make an Organic Sugar. With consume an organic foods, our live will be healthy organics.

Process of processing roomie into coconut sugar :

The sap that has been obtained is filtered, then put into a pan.
Roomie cooked with constant heat using wood fuel / litter or other fuels

Cooking time depends on the number of roomie cooked. ± 15 minutes before the sugar is cooked or in the phase of Nyengka (Sunda)? Semengka is given 100 cc of coconut milk (1 grated coconut mixed with 100 cc of water) or grated coconut, or cooking oil one tablespoon. Its use is to speed up the process of thickening of brown sugar.

If it has thickened and reddish color is poured into the mold. ± 10 minutes later the liquid is solid, meaning the manufacturing process has been completed.

Some molds are made from bamboo, molds are made and the place I use. small basin of size 0.5-1 kg so that the quality of sugar with this size is cheaper.

When using a coconut shell, in the first stage fill 3/4 of the ingredients first, then cool for 15 merit.

Remove from the mold after hardening, then stick to the sugar that is printed other, so that the resulting shape is identical to each other.

In order not to be sticky with each other, among the gala is the old and dried banana leaves.

Packing can also be done using bamboo baskets coated with dried banana leaves or dried teak leaves. or in wooden boxes covered with plastic.

By way of packing like this sugar can last ± 1 month.

The transliteration of the thai name is "namtaan peep". Amazingly good. 😋

Woah, Namtaan peep. As we know, this sugar is made from coconut, uniqely it is mixed in coconut drink (coconut ice), so-called "es degan" in Indonesian. I mean, coconut sugar for coconut ice. 😀

Yes I know. My father Indonesian born & raised - before Independence. In Thai we use this sugar in EVERYTHING - to balance spicy & sour flavours.

Yap, in spicy flavour, it is ingredient of "sambal petis".
