Patience gets rewarded
6 hours of closely monitoring the temperature of my smoking oven! 6 hours of fire management and in the meantime taking care of the tenderness of the meat, wrapping it in time and glazing it. It sounds simple l, but it isn’t! Still, practice makes perfect, and today I give my ribs 8 out of 10! Next week another try!
