Mature cheese is like wisdom you can eat. It has the essence of time in every little part, giving it a special taste that fresh cheeses just can't match. It's not made quickly; it’s carefully crafted and left to sit in dark places until its true flavor comes out. It ends from transformation, having a rare taste that can be nutty and sometimes taste bad.

Its flaws add to its goodness: the uneven edges, great smell, and great taste. It's not for everybody, that makes it that special. Mature cheese doesn't ask validation; it must be appreciated. It make us see that getting older is a great trait, not a bad one. It makes us remember that richness and high flavors are always the result of patience. Just a small piece tells a lot about mature, taste, and the good things to lets things mature properly.
