GARDEN TO TABLE: Malabar Spinach and Moringa Leaves + A Simple Recipe <3

We harvested our malabar spinach for the first time!!! I guess I've mentioned this plan in my previous blog and now, I'll show you what we did from harvesting to preparation to cooking!


Let's start with the harvesting part first! Enjoy! ^^

My mama did the harvesting this time so I could document properly. We're going to get some stalks and leaves for our lunch that day.

These were the malabar spinach we got. Well, we're just going to use the leaves, so I have to prepare it.

There are still a lot left and they'd grow again in a week or so.

Aside from the malabar spinach, we also harvested some moringa leaves. These two leafy vegetables really go well together. And they're both really healthy. ^^

Now, it's time for me to prepare them together with the other ingredients, so it's easier for mama to cook later on. I don't really like the cooking part, but I do enjoy preparing the ingredients.

Preparation done, so it's mama's turn. But before that, I actually decided to replant some of the malabar spinach's stalks. Let me show you.

They're actually pretty easy to grow. You just insert them in the soil like the photo above and in a couple of weeks, they're going to grow new leaves. <3 Now, on to the cooking part.

Here's our simple recipe!!!

Using a little bit of oil, you just saute the onion and garlic

You then add the chorizo. We took off the skin and just used what's inside it. It's already seasoned, so it's a bit sweet and spicy.

Once they're cooked, add some water. :)

Once it has boiled a bit, add the moringa leaves...

The malabar spinach follows immediately after.

Just season with some salt and pepper according to your taste. You can also turn off the fire after placing the leaves if you want them to be a bit crispy.

And so, our lunch was served. It seems oily because of the chorizo, but it was pretty easy to eat. It was a simple dish, yet very delicious and healthy. Instead of chorizo, you can also use some canned sardines in tomato. It's also really good to pair with moringa and malabar spinach.

It's amazing to actually just harvest and eat the vegetables you planted from your own backyard. For some reason, the vegetables taste much more delicious. haha
