It's summer break. June is a great month to kick off a family get-together with fun and food. One of the things I like is the quick and easy desserts that are perfect for family outings.
At this stage of my life, I look for quick and easy recipes. I can't stand for hours in the kitchen cooking and baking. For those who know me, I love good eating, but without the laundry list of ingredients. Then, the prep and cook time has to be an hour or less.
If you want a light dessert that you don't have to mix, then below is my quick and easy recipe for:
I love recipes that don't involve a full page list of ingredients. This dessert is an all-in-one. To me that means, I can mix and bake in the same pan.
Also, the ingredients have to be those that I normally have on hand. I hate grabbing my recipe only to discover an exotic ingredient is required.
Here are my ingredients:
1 (16 oz.) can fruit cocktail
1 (7.5 oz.) can pineapple (tidbits or crushed)
1 cup coconut
1 cup chopped nuts
1 (18.5 oz) pkg. cake mix (yellow, white, or butter)
1 1/2 sticks butter
1/2 cup brown sugar
1 tsp. nutmeg or cinnamon
1/4 cup water
If you must watch your caloric intake, then feel free to use the canned fruit in light syrup. This is what I usually do.
Assembly is easy. First, pre-heat oven to 350 deg.
Grease a 9x13 baking pan with butter.
Next, empty the cans of fruit cocktail and pineapple (including their juices) and water on the bottom of the pan making it the first layer.
Even it out so that it covers the entire pan.
Third, sprinkle the box cake mix over the fruit. Make sure to even it out over the pan completely.
It's time to add the good stuff. Melt the 1 1/2 sticks butter.
Then drizzle over the cake mix. Make sure all areas receive a portion of the butter. Add the brown sugar and spices.
Spread the coconut over the butter mixture.
Then sprinkle the nuts on top.
Place in 350 degree oven and bake for 35 minutes or until golden brown on top. No later than 40 minutes.
Remove and allow to cool for 30 minutes. Cut in squares.
And Enjoy!
This cake is delicious by itself or served with whipped topping or ice cream.
