Recipe for @Ablaze's Summer Salad

Summer Salad with Balsamic Vinegar, Olive Oil and Walnuts

Some people don't like salads and will say they are rabbit food or they won't fill you. I don't buy that though and every so often I go through a phase of salad making. That happened last week and after making my signature salad for a family barbecue, I found myself making salads all week and with me anything can go in a salad. Here are a couple I remembered to take photos of!

Ingredients

Spinach
Lettuce
Rocket
Scallions
Tomatoes
Walnuts
Balsamic Vinegar
Olive Oil
Black Pepper

Step 1

Mix together your greens. I use rocket, spinach and lettuce, but pick others if you prefer.

Step 2

Chop a couple of scallions up and a handful of cherry tomatoes also. Mix it through with your salad leaves.

Step 3

Take some of your walnuts and break them up small and sprinkle into the mix.

Step 4

Sprinkle on some ground black pepper.

Step 5

Now crack open the Balsamic vinegar and add a good splash.

Step 6

Nearly there now. Add a nice dash of olive oil.

Cracker of a salad, my friend! This is an awesome combination that is basically foolproof and always tastes so good. If you are feeling a little on the "wild side" of life, try adding some blue cheese or gorgonzola and crispy bacon bits!

Or, if you are not into the whole blue cheese thing, cubes of grilled butternut, feta cheese, and bacon.

The salad you made is an awesome base on which you can build a myriad of other salads!

Ah yes, all excellent additions my friend. Those cheeses wouldn't land well with my wife, but I liie them all. I do like blue cheese but it can be a bit over powering at the expense of other flavours sometimes. I love a good salad though and find it a great way to not waste food, as anything and everything ends up on the plate!

Oh yes, blue cheese dominates. I totally agree. A milder hard cheese (aged cheddar) is my go-to. Subtle nutty notes without the overpowering taste. And I concur! Salad for the win!
