Eggplants are also named Aubergines. They are fruits but people treat them as vegetables because most of eggplants are eaten cooked. The colors of the fruits is also various. Some are green, purple and little black. I like to eat eggplants with rice. I usually make eggplants balado ( eggplants with red chilli sauce).

NUTRIENTS IN EGGPLANTS

Before try to make a special dish with eggplants, let’s know the nutritions in the fruits.

In 82 grams of eggplants contains Calories: 20 Carbohydrate, : 5 grams Fiber: 3 grams Protein: 1 gram ManganeseI Folate, Potassium, Vitamin K, Vitamin C. Eggplants is Anthocyanin rich. Anthocyanin is a pigment of black, purple and blue color in fruits, vegetables and seeds. It is an antioxidant.

HEALTH AND EGGPLANTS

Do eggplants have benefit to our health? The answer is yes because the nutrients in the fruits.
1.Anthocyanin is an antioxidant that protect you from free radicals.
2.Eggplants improve heart health and reduce LDL cholesterol. This experiment is practiced in animal. animals were fed raw or grilled eggplant for 30 days. Both types improved heart function and reduced heart attack severity
3.Eggplants can lower blood sugar level. They are rich with fiber that has function to slow the rate of digestion and absorption of sugar in the body. They also contain polyphenols. Polyphenols may reduce sugar absorption and increase insulin secretion.
4.Eggplants can also help your weight loss program because fiber in eggplants can slowing calorie intake.
5.Solasodine rhamnosyl glycosides (SRGs) is a cancer fighter substance that exists in eggplants.

CHALLENGE MY EGGPLANTS RECIPES CALLED “TERONG BALADO”.

Eggplants in my coutry is named “ Terong”. Terong balado is fried or grilled eggplants pour with red chilli sauce. OK let’s try now!

First, Prepare two eggplants. Cut into two parts.

Second, prepare balado sauce. Here are the ingredients. Ten red chilli sauce, an onion, shrimp paste, little salt, and a tomato. Grind all the ingredients then saute in the frying pan.

Third, fry eggplants with little vegetable oil or sesame oil until tender.

Fourth, pour the chilli sauce over the fried or grilled eggplants.

Now the “ Terong Balado ‘ is ready. You can eat it with white rice, fried chicken or fried fish. That’s yummy.
